Try This Chicken Vegetable Soup for Cold Winter Days

Vegetable chicken soup is the perfect meal for any occasion. Whether it’s cold outside, you’re not feeling well, or you’re simply in a nostalgic mood, this is the perfect dish. Try this easy-to-make vegetable chicken soup recipe – it’s absolutely delicious!


  • 3 carrots, halved lengthwise, thinly sliced
  • 2 ribs celery, thinly sliced
  • 2 turnips, cut into ½” pieces
  • 1 onion, chopped
  • 1 lb. boneless, skinless chicken breast halves
  • 6 cups low-sodium chicken broth
  • 1 cup cooked rice
  • ¼ cup chopped fresh parsley
  • 1 tbs. lemon juice


  • Put vegetables into a slow cooker.
  • Add chicken with ¼ tsp. salt and ¼ tsp. pepper.
  • Pour broth over chicken and vegetables.
  • Cover and cook on low for roughly 6 hrs.
  • Transfer the chicken to a bowl and shred the chicken. Mix the chicken back into the soup.
  • Add in the rice, parsley, and lemon juice.
