The Versatility of a Sweet Potato Pizza
Eating pizza for dinner every weekend is a surefire way to add some inches to one’s waistline, which is why this healthy alternative looks so appealing. The creamy goodness of the baked sweet potato provides a sturdy and flavorful base to build on. This recipe uses pesto as the sauce but it’s also possible to use marinara instead, or a creamy dairy-based sauce. Cutting the sweet potato lengthwise makes good portions for a meal. However, for those planning to have guests over for a party, the sweet potato can be cut into circles or smaller portions to make fun and flavorful finger food.
This recipe calls for a few simple ingredients including:
- 1 sweet potato
- 3 ½ tablespoons of avocado oil
- 3 tablespoons of cheese of the chef’s choice
- ¾ cups of basil leaves
- ⅓ cups of baby arugula
- 1 clove of garlic
- 2 tablespoons of lemon juice
- 2 tablespoons of pine nuts
- Salt and pepper to taste
Preheat the oven to 425°F. Slice the sweet potato lengthwise, add ½ teaspoon of avocado oil to the slices, and bake for 10 minutes. In the meantime — combine basil, arugula, garlic, pine nuts, lemon juice, seasoning, and the rest of the oil in a blender. Blend until smooth and creamy. Take the sweet potatoes out of the oven and add the pesto on top of them, spreading evenly. Add the cheese on top and bake for another five minutes. All that’s left to do is enjoy this amazing treat!
